Danish New Year kransekage - almond cookies

I bake these every New Year's day, and this year, I decided to actually weigh everything and jot it down for future reference. I did do a few tweaks this year so it is a first time recipe and I only make it once a year, so if you are not
Blueberry goat cheese puffs - not grain free

I know, I know. Not paleo. Not grain free. But this is an excellent appetizer for gatherings of any kind. Even a party of one!

Here is how to make them.
Blueberry banana omelet pancake - wihtout an overly eggy taste

If you are like me and like to eat eggs, but you are just not a fan of an outright abusive eggy taste, then this is a perfect omelet / reduced sweetness pancake.

It is a great and quick staple for Sunday brunch. Here is how to make it.
Cacao-latte with coconut creamer - truly sugar free recipe

I am that rare bird who does not like coffee. Like at all. Also not in ice cream. Also not in chocolate and yes, also not Tiramisu.

But I do like a nice cup of something warm in the morning. For the longest time that has been tea.

I also really like hot chocolate. I used to drink my fair share of cocoa and sugar mixed into hot milk. Yum.

However, lately I have been trying to reduce sugar and dairy in my diet and came up with this guilt free - maybe even good for you - drink. I call it a Cacao-latte.

Meal prep: Large batch Enchilada mexi veggie bean mix

This week I made a batch of Mexican style veggie mix that I can freeze up and then pull out to make a nice dinner with "lots of vegetables".

Have you ever thought about how people use the term "lots of" in front of veggies. Would you ever say that about meat or potatoes? My dinner had "lots of veggies". Yes. But my dinner had "lots of potatoes". That sounds strange. My dessert had "lots of ice cream". No, right?

Anyway,

lets get into this veggie mix while it is still fresh on my mind. It was so good.
