Chocolate coconut truffles
These little morsels of goodness are actually jam packed with nutrition. Oh yeah ... they also taste really really great.
1/2 cup of shredded coconut
2 tbsp of almond butter (The ingredients on the back should say: dry roasted almonds and that's it. Nothing else)
1 tbsp organic raw honey.
1 tbsp fair trade cocoa
2 tbs unrefined coconut oil
1 tbsp Chia seeds
1/2 tsp vanilla extract or even better: the seeds from a vanilla pod.
Slivered or raw almonds, chopped for rolling.
Mix and roll into 3/4 inch balls.
Roll and press into the chopped almonds.
Refrigerate for at least an hour to let the wet and dry ingredients get a chance to hang out and become friends.
Now Christmas can come early, right?
I stopped eating sugar, bread and dairy about 7 or 8 weeks ago, so everything tastes sweet to me. If you eat sugar regularly you may need to add more honey to get to your desired sweetness.
Health benefits of
Coconut - Protein, fiber, iron, zinc.
Almond butter - Protein, fiber, monounsaturated fats.
Honey - iron, calcium, phosphate, potassium - but also high in fructose, so keep to a minimum.
Cocoa powder - Iron, manganese, magnesium and zinc, flavonoids, antioxidants.
Coconut oil - Superfood, healthy fat
Chia seeds - Omega-3 fatty acids, fiber, antioxidants, minerals, insulin regulator.
Vanilla bean - Small amounts of niacin, thiamin, riboflavin and vitamin B-6

Having one or two of these after dinner is a great way to end a meal I think. I love the rich chocolate taste and the bit of crunch from the Chia seed and of course you can never go wrong with almonds. Am I right?
